Which form of vitamin C is best?
Ascorbic acid is a well established form of vitamin C and the one most often studied, so the question of form is less about replacing it than about what surrounds it.
Once consumed, vitamin C is absorbed through the intestine and transported into circulation. That process is regulated rather than unlimited. At ordinary dietary and supplemental amounts it is absorbed efficiently, but as single oral doses become much larger the proportion absorbed falls and urinary excretion increases.
So a very large number on a label does not tell the whole story. Researchers look at several distinct stages: how quickly vitamin C appears in circulation, how it moves into cells, and how long measurable levels are retained.
